sweet potato soup

This easy soup is a surefire way to warm up after a long day on the mountain. Serve with toasted bread, side salad, and craft sausages.

ingredients:

  • 1 yellow or white onion, chopped

  • 1 tablespoon olive oil

  • 2 cloves garlic, pressed or chopped

  • 2-3 lb sweet potatoes, peeled and cut into chunks

  • 4-6 cups vegetable or chicken broth

  • 4 very ripe pears

  • salt and pepper to taste

  • 2 tsp fresh ginger, grated

directions:

  1. Saute chopped garlic and onion in olive oil

  2. Add sweet potatoes and broth. Simmer until sweet potatoes are tender.

  3. Cool soup, add pears, and run through blender in batches until smooth.

  4. Reheat soup. Add water to desired consistency. Stir in grated ginger

  5. Garnish with paprika, thyme or sage leaves, and a dollop of sour cream, goat cheese, or coconut milk
